In case you haven’t noticed by the lagging number of blog posts, it’s already been a hectic holiday season. After a quick scan of the calendar, every weekend is filled with preparations, get-togethers, work functions, etc. So, the problem is what to do when you get home. My first instinct when I get home is to crash, throw on Netflix, and throw myself at a bag of chips until I fall asleep. Not exactly creative, so I’m trying to grab inspiration wherever I can get it, even if it means embracing ingredients that normally don’t scream “delicious!” to me.

Today is the first day of Autumn. Goodbye Grilling out, goodbye watermelon, bright citrus, and roasted corn. However, hellooooooo soul-warming food. I love Fall, because we get to switch gears, throw on a sweater, and baby, get a stew goin’ (can you tell I just finished an “Arrested Development” marathon?). But, I don’t want to throw away the flavors of summer yet, especially when we’re still surviving 90 degree days.

So, I got a little inspired by our last meatless Monday, so I started looking into Vegetarian recipes that were still homey and classic. Veal or Chicken Parmesan has always been one of my favorite dishes, but I’ve never tried the eggplant variety. I’ve had bad luck with eggplant dishes (like my failed attempt at ratatouille), but after a busy weekend, a nice filling Italian dish seemed like just the trick. Continue reading

So, I know a few people who are now embracing Meatless Mondays (including our friends at Triangle Good Eats). Meatless Monday sounds like a good idea to me, but ever since my daliance with Vegetarianism (the hardest 12 months of my life), it’s still a little hard for me to imagine a filling, healthy, and satisfying meal without meat. Even my mushroom risotto needs chicken broth!

One of the few drawbacks to living in an apartment is the fact that we don’t have regular access to a Grill. The communal Grill is a block and a half away and not conducive to private grilling sessions. I’ve had to look longingly at grilled recipes, especially when they call for steak. However, a lot of indoor cooking recipes for red meat fall in the “put in a pot, let stew for three hours,” which isn’t exactly light summer fare. But sometimes, the need for a piece of red meat knows no bounds.

I haven’t had a chance to visit my lovely hometown of Springfield, IL in more than a year now, and I have long been craving its famous native dish: the horseshoe. I had wanted to try making one myself ever since I saw it on Man V. Food and got more than little nostalgic for my hometown and its famous dish. As mentioned in my earlier post, the Horseshoe sandwich is a dish that is limited almost exclusively to the relatively small city of Springfield.

I’ve never been one for sweet breakfasty breads; something about cinnamon buns and the like makes me rush for a nap. But, even more than that, I also hate a waste of food and after weeks of throwing away bananas, I had enough. It was time to master the art of banana bread.
